How does a kitchen hood fire suppression system work?

A hood suppression system is built around the cooking line, not the room. Heat-sensitive detection (typically fusible links set above each appliance) holds the system armed; when the temperature over the cooking line passes the trigger point, the system releases automatically. Nozzles aimed at each appliance and into the hood plenum discharge a wet-chemical agent that smothers the flames and cools the grease so it cannot re-ignite. The same activation shuts off gas and electrical supply to the cooking line, so the fuel feeding the fire is cut at the same moment. A manual pull station lets staff trigger it by hand if they see a fire first.
